This EtsyBloggers Carnival is hosted by Lois at http://foxygknits.com.
February is Heart Health Month*. What is your best heart healthy recipe? What do you do to stay heart healthy? How do you promote heart health?
I think I missed the deadline for this carnival, so going to do a quick post. A recipe!
Roasted vegetables: Wash and dry veggies, cut into bite-sized pieces. Toss with salt, pepper and a dash of olive oil. Roast at 425°F until brown, 20-25 minutes. Some of my family’s favorites: cauliflower, celery, onion, red peppers, green beans (beans look kinda gross after they’ve gotten brown and shriveled, but taste really great). I like squash, yams and potatoes roasted, too. Then there’s eggplant, cherry tomatoes… I think I’ve roasted every vegetable that’s ever been in my kitchen. It’s surprising how sweet everything tastes after it’s been in the oven – sometimes it’s hard to get these to the table if everyone starts snacking on them before the meal is served!
What’s your favorite way to serve (heart healthy!) vegetables?
Dearest tammy, i always love the month of feb!! Love is in the air. Thanks so much for sharing that yummie recipe! Have a lovely merry happy day and love to yoU!
ReplyDeleteSometimes the only way I can serve vegetables is the raw way: sliced up tomatoes with a drizzle of olive oil, carrot sticks on the side, chopped up spinach on top of pasta. It's a lot easier for me, especially with picky kids (and a somewhat picky husband).
ReplyDeleteI love February. I hope to share a lot of heart-ful (ya get it??) sentiments here and elsewhere with you!
Much love,
Richela
Thanks so much for stopping by my blog and leaving such a nice comment about my work.
ReplyDeleteI love vegetables and my favorite way to eat them is raw in salads! I will have to give your recipe a try too!
sounds delicious, and all the hearts are adorable! {:-D
ReplyDeleteand corn, too!
ReplyDeleteRight now, it's salads and soups.
Mmmm...your recipe made me hungry at 11:50 at night. Probably not healthy to eat at this time, huh?! Very true, though, that roasted vegetables are sweet and tasty...and of course those are heart-healthy. :-)
